You too can be "Chopped Champion"

If you are a fan of the food network show "Chopped, " They recently aired their first "Chopped Amateurs" show a few weeks ago.. The dessert round featured amoung many items, pound cake. Both Amateur chefs chose to make  "Pain Grille" or French Toast. It was thrilling watching them make whipped cream out of Earl Grey tea leaves( something I will not be trying myself) and carmelizing cinnamon chips with mascarpone and heavy cream.  Watching it, I sent a silent thank you prayer to God that my guests are never as critical as the Chopped Judges.

I thought I might share my own "Pound Cake Pain Grille" recipe. Now I'm an Innkeeper, and a busy one at that.. I 'm going to say it.. I'm going to say it.. Its OK to use store bought pound cake. We are all Innkeepers in our own right.. Some of you are just taking care of guests in your home for free and god knows you people need to feel good about taking a shortcut. Get a store bought pound cake. Its ok. Nobody will know. Nobody will care.  That being said.. if you are a perfectionist.. www.southernliving.com has got some great pound cake recipes- in particular the lemongrass and lavender infused one is pretty spectacular.

Back to the recipe... Loaf of pound cake.. make sure its thawed.. I usually buy mine fresh from the bakery( a girl has to have some standards).

Turn your griddle or grill on... its needs to be hot enough that it sizzles when you hit it with a spritz of water.

1.5 c of milk( if you want to get special, french vanilla cream rocks as a replacement to the milk)
3 large eggs.

Wisk the eggs and milk together and drench both sides of your pound cake in it.  Drop onto a Grill and flip when it browns.

To make this recipe standout its the triple berry compote thats so important. I briefly saute sugared strawberries, blueberries and raspberries in a tiny bit of butter and grand marnier and vanilla ...( too much of this will set the kitchen on fire but you will look super impressive so I recommend a crowd- one of them discreetly holding the fire extinguisher) and then lay over the french toast..

You've got a couple of topping options. Straight maple syrup never disappoints( but its got to be the real stuff not corn syrup with brown food coloring- this is NOT okay-we've got to draw the line somewhere).. Maple Praline syrup is going to make your guests worship you.. or you could go with a maple mint cream...

Mix 1 c heavy cream beat at high speed until stiff peaks form then gradually add
 1 1/2 tsp plain yogurt and 1 1/2 tsp maple syrup and 1/2 tsp mint extract.... Blend together and top over the berry compote. Garnish with a fresh mint leaf, or in the winter months a sliver of kiwi will do the trick as well.
This would probably be lovely with a cup of Earl Grey....

Fall Recipe- Cinnamon Raisin Bread Pudding

It's my favorite time of year.. time to dig out the Fall and Winter recipes you tucked away in the spring for when the air has that fall nip and you need something warm on the inside.

One of my favorites that we serve guests always to rave reviews is Cinnamon Raisin Bread Pudding.. This is an easy crowd pleaser that can be modified for 2-20. This edition will serve 8 either in individual ramekins or in a round 2qt casserole. To serve individuals from the casserole.. I cut into 8 slices, like you would slice a pie and serve in a small cereal bowl.

You will need:
1/2 c raisins
1/3 c orange juice ( apple or cranberry juice works in a pinch)
8 slices Cinnamon Raisin Bread cut into 1 " cubes
3 Tbsp melted butter
2 c milk
3 large eggs
1/3 c sugar
1 tsp pure vanilla extract

Soak your raisins in a the orange juice for 15 minutes. Then drain off the extra oj. Set aside.
Spread your bread on a baking sheet and drizzle melted butter over it. Toast in oven @350 for 10 minutes, flipping them over once.
Spray your container(s) with pam.
Whisk eggs, sugar, vanilla and milk together.
Divide bread between 6 ramekins or place in small round 2 qt casserole. sprinkle oj soaked raisins over the top. Pour milk and egg mixture over casserole.  Allow to stand in fridge for 30 minutes so that bread soaks milk mixture up. ( This is important, otherwise it becomes very dry.)
Bake in oven at 350 for 30 minutes for ramekins or 45 minutes for casserole.

We serve this as a "breakfast dessert course"  during our fall and winter months. Seriously people, dessert should be served at every meal.
However, you could also serve it as a light breakfast prior to a huge meal, say Thanksgiving or Christmas?

Weddings at Fallen Tree Farm

Its a gorgeous fall day in the Cumberland Valley with temps predicted in the 70's for the rest of the week.  We look forward to peak foliage season this week ( and then raking leaves next week)
We just ended what we affectionately call "Wedding Season" which starts September 1st and runs through the thrid weekend in October every year.. We host several weddings/receptions, elopements, and just ceremonies during that period. Its a joyful time of year not just for the changing season but for all the happy families that stay with us and enjoy the joining of two lives together. This fall we had lots of different personalities and each came with its own set of wonderful memories.

We had a few firsts- Bride and Groom see the Farm for the first time just days before the event. Stationed in Africa Anthony and Christina relied on Anthony's mom Donna to make critical decisions regarding the wedding. Donna worked diligently with us and the caterer to make their day special.

We had a skype attendee- Amanda Shaffer's uncle, stationed in Afghanistan attended the ceremony via skype.  He had his very own chair in the front row. Technology is so cool.

We had a Springer Spaniel Ring Bearer- Ellie Mae dutifully charged up the aisle with bling attached to her collar so that her owners, Teresa and Rick might exchange the outward symbol of committment. Her outward symbol of committment was sparkly velvet red collar.

We had a Groom on horseback, my horse's back to be exact! Magic, my 25 year old quarterhorse added Groom Bearer to his resume when he carried Rick to the altar to meet his bride. Although he and I rehearsed it several times during the week there was no way to recreate 115 guests, booming sound system and a billion cameras as he carried his French Revolutionary Costumed Groom to the ceremony. Between the Tri Corn hat and the sword, Magic wasn't sure what the plan was, but he was good anyway! He's played polo, done the hunters, competed at Harrisburg, dressage, team penning, calf roping, paper chases, fox hunting and pony club.. so this was an easy one but I was still really proud... Groom professed to be a "pretty good rider" once he gets his feet in the "holsters"so Magic gets a gold star.

Several dates left in 2014 and now is a fabulous time to tour the property while the foliage is turning.

While the Innkeepers are away.....

Its been ages since I've found time to blog... but I've found some today since Brent and the girls and I snuck down to Cape May Point for a week's vacation! We've left the Inn in the trusty hands of our Guest Innkeeper ( and big sister) Donna, and our housekeeper, Meta.  I'm certain our guests will keep them on their toes, but they are excited to meet and take care of all of you.

If you've never been to Cape May, you're missing something... amazing sunsets, beautiful ocean views, antique stores,!, Duty free shopping just a ferry ride away in Delaware, plenty of sand and sun and amazing eateries. The point is especially wonderful. A quiet little beach community, with a general store, a gorgeous park with nature trails and the lighthouse. We've been getting in lots of jogs and bike rides with the girls and dreaming about someday owning our own beachhouse.  Not suprisingly, Brent is most interested in the condemned bldgs that he is sure he "Can fix right up". 

This week the lighthouse had an artisan festival where I indulged in my new love, jewelry! Ever since I cut my hair short, I can't stop buying this stuff. Lucky for all of us, my taste leans toward the pretty pebbles rather than the shiny rocks.  The girls frequently dig in my jewelry box.. no point in putting something to terribly precious in there.

While down here we've begun working on our cookbook Many of you have asked for recipes time and again. I always print them out and say 'someday" I'll get to a cookbook. This winter's plan is to GET TO IT. We'll be photographing the food like crazy this fall as the weather turns and there's a bit more time after wedding season..

Wedding Season yikes! There is a fair lot of you getting married this fall... We so look forward to making Nicole, Amanda, Lucy and Theresa feel like the most special women in the world on their nupital days. I've very much enjoyed the planning with all of you.

There's a ton happening at the Inn in the next couple of weeks...  Corvettes at Carlisle and school starting for the little kids at South Middleton School District and big kids at Dickinson and Messiah. The end of the summer season with Labor Day Weekend but we'll still be hosting any of you who want to join us for smores near the fireplace well into November.

Check back with us again for the Breast Cancer Awareness special the Cumberland Valley Bed and Breakfast Association will be doing in October.. Think Pink!

We'll be participating in B&B's for vets again this year in November running our Girls Getaway Weekend Specials in December.

I've jumped ahead a bit but only because I'm so excited at all the great things headed our way. Fall Foliage should be fabulous this year with the amount of rain we've had. The farm is never prettier.

Spring Projects

Brent and I have the week off from our "regular " jobs to work on some new projects and some touch ups around the farm. The weather is to be wonderful, which is great because I've promised Magic, my 25 year old quarterhorse a couple of gallops this week. We'll be putting the finishing touches on the first part of the new quarantine barn for traveling equine visitors and working on the flagstone patio that will be used for dancing and cocktail hour during our weddings. Of course there are the regular jobs that always need done in the spring, painting the porches, and fencing. Plenty of white fencing to paint. Our new parking area has been seeded and graveled and will be ready for our Fall weddings.

Carlisle Events present Spring Carlisle April 25-29. We still have one room left for that event. If  you coming for the swap meet or auction why not stay with us as an alternative to local hotels? A fabulous breakfast is always included in the room rate and we'll be happy to help you find a great dinner spot with one our unique Carlisle Eateries.

Keeping Busy During the Crazy Weather

If you've driven down the driveway recently or are planning to you'll notice that there's some significant work being done in the woods that border the drive. Right now with the crazy warm wet weather it looks as if we've asked people to make mud but in reality, a crew is taking out the old dead trees that continually fall down with each good wind, blazing nice wide trails for walking and riding and giving us some additional special event parking. Our apologies while this is going on. The plan is to have it completed by spring. We appreciate your patience and understanding.

Inside there's some good stuff going on as well. We're refreshing the master bedroom in the Grey Mare's Quarters, with new bedding and a fresh coat of paint( goodbye pink, hello lovely neutrals!). In March a new spa shower will be installed in Graham's Retreat which will feature a luxurious rain shower head and body sprays inside new terrazo marble tiles.

The first section of the quarantine barn is nearly complete with plans to put an addtional two stalls in this summer. This will be for our traveling equines to stay in comfort, provided our daughters don't find a new pony in the meantime.. Its quite hard to keep stalls empty here, I've discovered and is there anything more fun than pony shopping?

Speaking of ponies... Ours are ready to make your child's birthday special. We've begun taking reservations for pony parties starting in April. Contact us via email if you are interested in how we can make your child's special day no stress for you and memorable for them.

2012 PA Farm Show!

Its that time again, time for the largest agricultural exposition in the country, the 96th annual Farm Show. As a kid this was huge for my family. We'd take the day off from school to go see the butter sculptures, watch the "Garden Tractor Pull" and of course all the horse events, my favorite being the 6 Horse Hitch.

They have something for everyone from Culinary School Demos to Logging Horse Demos to  Square Dance Parades. The Mini Pony Pull will be popular with your kids while the Skid Loader Showdown will make husbands laugh.

The Show runs from January 7th- 14th and is something worth coming into the area for.  Fallen Tree is just 20 minute away from the Farm Show arena and has a great special for a two night stay for this event. Call us today for reservations.

Time to get Snowed Inn with Us!

As the excitement of the holidays fade you might find yourself exhausted by all the clamor of family, friends, gifts, parties etc. Or you might find yourself energized by the opening of a New Year. Either way Fallen Tree is a great place to find respite in the month of January. While there are several events going on in the area, perhaps having an UNEVENTFUL weekend is the way to do it. Three of the four rooms at Fallen Tree have fireplaces and the dining room is stocked with coffee/tea, hot chocolate, cookies and popcorn. Pick a movie from our stocked DVD cupboard and never leave your room.... Ok.. maybe leave to visit us in the Dining Room for breakfast. Its three courses of gourmet scrumptiousness. But if you REALLY don't want to leave your room... We'll bring it to you on a tray with a carafe of piping hot coffee.

But if you really need to go out... Check out  the 10th Annual Ice Fest in Chambersburg PA January 26-29, 2012. See live ice carving, take a run down an ice slide and check out the Chili Cook off. Its a unique event that has grown each year.

Fallen Tree to Honor Vets with Free Rooms on Veterans Day




(Carlisle, PA) –  Fallen Tree, a member of the Cumberland Valley Bed and Breakfast Association will join hundreds of inns and B&Bs throughout the U.S. and Canada in honoring active and retired veterans with free rooms in recognition of Veteran’s Day. In a campaign called B&Bs for Vets, Fallen Tree Farm and other  members of the Cumberland Valley Bed and Breakfast Association will join inns and B&Bs across North America in opening their doors with complimentary stays for vets on November 10, 2011 so they can wake up on Veteran’s Day to a wonderful breakfast after a great night’s sleep in a B&B. At last count over 700 Inns were participating.


This is the second year that Fallen Tree Farm has participated in this campaign. In addition, this year we offered additional discounts on other stays to veterans who couldnt' stay with us over the holiday.


“We are proud to join innkeepers across the USA and Canada in honoring active and retired military and veterans by offering a complimentary room(s),” said Kim Hanlin, innkeeper at the Fallen Tree Farm and President of the Cumberland Valley Bed and Breakfast Association. “We are thrilled that thousands of vets and their families will wake up on 11-11-11 in a B&B, like ours. It’s one small way we can thank those serving in the military and their families for the important work they do” finished Kim Hanlin

The B&Bs for Vets program started in 2008 when Kathleen Penek, co-owner of the Gillum House and a handful of other innkeepers in West Virginia opened their doors to veterans in honor of Veteran’s Day. The program grew in popularity among innkeepers, and last year more than 900 inns in the US and Canada participated by offering free rooms to vets. This year, the Professional Association of Innkeepers International will coordinate the B&Bs for Vets program as a way to help veterans learn about today’s B&B experience.

Mercersburg Inn getaway

I'm sure its not often that an Innkeeper blogs about another Inn, but I have to. The place is just too wonderful to go without mention, plus I have the time to, as Brent and I have snuck away from Fallen Tree to celebrate our 15th wedding anniversary and do some long range planning for the B&B. Since the last 6 of those years have been spent purchasing, renovating and running Fallen Tree, staying married is no small accomplishment. As any Innkeeper might tell you, there can be some friction when two people open up their home and lives to guests.

For a quick getaway we decided on the Mercersburg Inn, A lovely 22,000 sq ft mansion in Mercersburg, about an hour from Fallen Tree. This place is A-mazing. Gorgeous, beautifully maintained, spic and span, each room with fabulous historical character and personality ( we were here on a Sunday in which many of the rooms were empty so I couldn't resist peaking into the open, unoccopied rooms-I've made a list of the ones I want to stay in next)

Of course because we are busy busy innkeepers our night of choice to get away is always Sunday, after our guests have left and we've saddled our parents with the girls, horses and dogs. I believe we are the only guests here.  I apologized to Lisa, the innkeeper, for keeping their Fabulous Chef, Dan Nowalk, on a Sunday. She said not to be silly... but we truly appreciated the care with which we were treated... the food, wow, the food.. so so good. Sweet potato Shrimp Bisque = heaven. My only regret was that I was so full I couldn't even conceive of dessert since I dearly love Creme' Brulee.

This morning, after a great nights sleep on a cozy nest of down, I enjoyed the spectacular views from our balcony of the Tuscarora mountains and am excited for breakfast. But I have to give huge kudos to the Mercersburg Inn staff that we've met and at least one we didn't( Shirley, their clearly meticulous housekeeper) Melissa, Nicole, Lisa, Jim and Chef Dan, you are doing wonderful things here and the Fallen Tree Innkeepers are looking forward to a return stay!

Fallen Tree Farm Survives Tornado


On Thursday May 26, Cumberland Valley experienced a tornado touchdown. At 217 years old, the house didn't bat an eye at the high winds,golfball sized hail and driving rain. She eats tornados for breakfast. As the kids and Brent huddled in the basement I stayed upstairs running from room to room to get a look at what was going on outside. There was plenty to see. Our Bradford Pear which brightened spring days with its pretty fragrant white flowers uprooted and crashed to the ground taking out the brick wall in our garden and missing the front of my mini cooper by 8 INCHES! Another tree came down in the ruins, our wedding ceremony area, and smashed the pergolas to bits. The backyard is a hot mess with at least 12 trees uprooted or missing their tops and so far we've counted at least 43 tress in the woods that will need to come down. But it was a lucky day. No lives lost, nothing hit the house, the power was back on in 12 hours and we were able to receive a houseful of guests Friday evening. Three days later as the Memorial Day holiday weekend came to a close, all remnants of the Pear were gone, thanks to a neighbor and his backhoe, the ruins were cleaned up and prepared for pergola reassembly and the trees in the back yard have been cut up and have the potential to become a tree house. Our guests were fabulous, completely understanding, and awestruck. Several mentioned how lovely the property was and I couldn't help but think... " You should have seen it on Thursday BEFORE the storm!"

Spring Cleaning and Daylight Savings

Spring cleaning in the gardens! and pansy planting! Weekend temps predicted to be in the 50's and we get an extra hour of daylight! Brent would mention that we also lose an hour of sleep.. but I'm a cup sorta full kind of person.

Inside,we'll be refreshing Graham's Retreat with new blinds, fresh paint, and new closet doors. The essence of the room will remain the same with its fireplace, toile bedding and expansive balcony, we'll just be tweaking the color a little. The best part about refreshing the rooms is that we do it with plenty of beer and pizza on hand... this is the only way to get Brent to wield a paint roller.

Savor the Flavor " A Taste of Carlisle"

The 11th annual Savor The Flavor is being held this year on Sunday March 13th from 1130-230 at Dickinson College's Holland Union Building. This is a fabulous way to get a taste of all the unique eateries from the Carlisle area. We've got a long list of culinary delights ( over 25 restaurants in a 10 block area!) Brave Guest and Friend Home from Afghanistan

I have blogged about the Kerr Family who stayed with us for several days for their son, Cameron's, graduation from Dickinson College and his Commissioning into the Army. Many guests leave here as friends. The Kerr Family left here like family.

Recently I mentioned that he was deployed late last year to Afghanistan with his platoon of 22 men. We've just heard that he's come home after a tragic incident which involved an IED and the loss of a portion of Cam's leg. Cam was rushing to the aid of an Afghan soldier with his platoon, also injured by an IED, when he set off another. Members of his platoon came to his aid quickly and efficiently and Cam was transported out via medevac. Now at Walter Reed, he'll have a year of PT ahead of him. Cam's eternal optimism of course comes into play here..While I can only imagine being devastated by these events, Cam will turn this into an opportunity to share and teach others as only he can.

The Kerrs remain in our thoughts and prayers, with Cam's new path at the forefront of our minds.

Spring Warm up in February!

An unexpected warmup this week has me thinking of spring, which brings a new breakfast menu, and landscaping ideas. It also brings a host of events taking place in the area. The Pennsylvania Garden Expo 2/25-2/27 at the Farm Show Complex in Harrisburg will get you dreaming about how to live outside like you do inside. If you are a horse lover, like me, you won't want to miss PA HorseWorld Expo 2/24-27 also at the Farm Show Complex. My favorite portion of this event is Theatre Equus and new and exciting this year is the Extreme Cowboy Race.. Sure to thrill the young and young at heart horse fans in your family.

If you are just looking to have a quick getaway there's no two night minimum here! If you can only stay with us one night we'd still love to have you! We recently updated our suite, the Grey Mare's Quarters with a gel fuel fireplace, full sized living room and a queen size alcove bed. The suite will now sleep six for a family getaway with all the room necessary to keep those that you love near and dear. Our walking trails will be open soon- bring the wellies! And if you don't mind looking at ponies covered in mud.... then we've got a bunch here that would welcome a carrot, a pat on the nose and a kind word.

While the weather has warmed up, the slopes are still open and wonderful. We've got midweek and weekend lift tickets for that skier getaways and all through February our skiing kids stay free, so bring the family!

Time to Book Weddings in the Harrisburg PA area!


The farm has been flooded with brides in the past three weeks, some newly engaged and others fulfilling their New Year's Resolution to "Get that knot tied in 2011!"
Its been wonderful meeting so many new people and showing them the property. While the property is certainly stunning with all this snow, it is hard to imagine a Spring or Fall wedding here. Regardless, our brides have great imaginations and can already see a White Tent with fairy lights, elegant chandeleirs, candles on the tables, and flowers bursting out of the beds and urns in the ruins. We're happy to provide a photo album of our past weddings to help them cement those images. Graduations

Its been ages since I've found the time to blog.. that's both good and bad news. What it really means is that I've been up to my eyeballs in guests which is great news.

We watched four Dickinson students, whose families have stayed with us many times, graduate in May. It was a joyous occasion for all of them and we were delighted to host several of those families for a dinner here at the farm.

A bittersweet moment- Cameron Kerr, who graduated from Dickinson in 09 and then was commissioned into the military, will be deployed shortly to Afghanistan as a 1st Lt. with the 101st Airborne, 2nd Combat Brigade. His family came from California and Scotland to be with us last May. It was a lovely time. Our thoughts and prayers are with Cameron as he travels to the "Big Sandbox"

Our neighbor Gillian, who has been exercising the horses here and helping with housekeeping duties graduated from Boiling Springs High School last week. We hosted her Graduation Party here last weekend. Gill has been accepted to Wilson College where she will be studying to be a veterinarian. We'll certainly miss her in the fall but she'll be here with us all summer which is good news for the horses and us.

Up next, Army War College Graduation in just a few weeks!

House Tour Success! 12/06/09


We had a lovely successful Bed and Breakfast House Tour to benefit Project SHARE, an organization that provides food and clothing to Cumberland Valley families. Over 125 people crossed our threshold and got to taste the wonderful cakes donated by Tami and The Fancy Cake Shoppe in downtown Carlisle as well as tour the entire house and get a peek at what an Innkeepers life is like? Our top question of the day? "What made you decide to become an Innkeeper?" Meeting great people like all the ones we met today. It was my first turn as a committee chair for our Cumberland Valley Bed and Breakfast Association and I had some wonderful support from Tracie, my good friend and innkeeper at Blair Mountain www.blairmtn.com and Mary at Carlisle House, www.thecarlislehouse.com. We raised $1820.00 for SHARE which actually results in the ability to purchase about $29,000! groceries from the Central PA Food Bank. Warms my heart. This is what this season is all about isn't it? Dee Fegan, President of the cumberland Valley Bed and Breakfast Association and Innkeeper of the Fabulous Pheasant Field Bed and Breakfast are shown here presenting the big check.

Family Reunion and House Tour!

What a wonderful weekend this has been. Today we celebrated Joe Keller's Birthday here at the farm with his family. Joe and his wife Mary Jane owned Fallen Tree Farm, then Kellerhaus, for 20 years and were instrumental in the beginnings of the bed and breakfast movement in Carlisle and charter members of the Cumberland Valley Bed and Breakfast Association. We regret so much that Joe passed away late last winter. It was wonderful having his family stay with us and reminisce about the farm. We certainly feel blessed to have found the farm and hope we carried it on in a tradition they would approve of.

Just a little over a month until the first annual Cumberland Valley Bed and Breakfast Holiday House Tour to benefit Project Share. Sunday December 6 from 1-5pm, 9 of our historic B&B's will open their door to the public. Come see the homes dressed in their holiday finest. Some wonderful local musicians and caterers are scheduled to appear at the B&B's. Come out and support a great cause and take a step back in time. Any guest staying at Fallen Tree Farm that weekend will receive two complimentary tickets to the house tour as part of the stay.

Best friend of Man's Best Friend


Wedding season has come to a close. We wish the four wonderful couples who were married here this season all the best and hope they will take time to celebrate their anniversaries with us in the coming years:

We had a really fun and interesting guest stay with us last week. Don Abney of
Abney Catahoulas was here for a week of canine tracker training with York County Dog Training Club. Don has literally written the book on canine tracker training "The Canine Tracking Guide". While staying with us he broke Sully of his sometime overly effusive greeting habit. Sully now manages to greet us and our guests in a nice pleasant "sit". We really enjoyed Don's stories with regards to his dogs. We( Sully, Sebastien and all us humans) were sad to see him head back to Louisianna.
